To expound a little further on Aisha's explanation, sunchokes are a bit like potatoes in the way you prepare them. They're incredibly invasive perennials (which when it's food is not a bad thing ;). The roots (the part you eat) can be left in the ground over winter, and they will spread in the spring, but they can also be left in the ground until spring and then eaten as an early spring food.

The little patch we planted two years ago has really expanded, and this year, some of the flower stalks were more than 10' tall. It was pretty incredible.
